Some ways of preserving fish when you have too much of it: |

Freezing
- solidifies water in the fish and lowers the temperature below which
bacteria are active. |

Salting
in a barrel - removes moisture and creates an inhospitable environment
for the bacteria. |

Drying fish in the
sun or in presence of cool, dry smoke - removes moisture necessary
for bacterial growth |
